3-5yellow potatoes – when chopped you should have about a quart(4 cups) of potatoes
~¼cup Oil of choiceLard, Tallow, Coconut or Avocado
1tspSea Salt
1/4tspPepper
1tspeach Garlic Powder, Paprika, Chili Powder & Parsley
Instructions
Place your large cast iron pan into your oven and preheat your to 425℉.
While your oven & cast iron pan are preheating, chop your potatoes into approximately ½ inch cubes and place into a medium sized bowl.
When all of the chopped potatoes are in the bowl, drizzle with your oil of choice and sprinkle with seasonings.
Toss or mix the potatoes until all are mostly covered in the oil and seasonings.
Once the oven has come up to temperature, add all of the potatoes to the preheated cast iron and spread the potatoes apart so that there are no overlapping potatoes.
Bake at 425℉ for 30-45 minutes or until your desired crispiness.
Once fully cooked, remove from the oven and serve with your meal of choice.

Notes
TIP: Try to chop your potatoes as close to a uniform cube shape. This will help to ensure all of the potatoes cook evenly. Chopping too many into small, uneven or too skinny of pieces can result in dried out or burnt potato pieces.Other suggested seasoning combinations:
