How to Make Crispy Potatoes In the Oven

Potatoes are a very versatile and delicious vegetable and crispy potatoes are no exception! This recipe for crispy potatoes is a perfect addition to almost any dinner. They are easy to make and are delicious every time. My family loves having these crispy potatoes so much that we typically have them at least once a week. 

The Best Potatoes for Roasting

I’ve found that the best potatoes to use for these crispy potatoes are a yellow, russet or white potato. I’ve found they are better in this preparation due to their higher starch content compared to red potatoes. However, The potatoes that you choose for making these crispy potatoes will greatly depend on which potato you and your family like to eat regularly.  

The Herbs for Crispy Potatoes

Herb Combinations

While this recipe only uses a few seasonings, there are many herbs and seasonings that work really well on roasted potatoes. Here are some herb/ spice combinations I’ve found to be favorites.

  • Salt, pepper, garlic powder & sage
  • Salt, pepper, garlic powder, paprika & chili powder
  • Salt, pepper, garlic powder, parsley & thyme
  • Salt, pepper, garlic powder & dill

Fresh Garlic vs Garlic Powder

Although fresh garlic is wonderful to use in many recipes including other potato dishes, I’ve found it’s not great to use on these crispy potatoes. 

When using fresh garlic in recipes, you have to pay close attention to the temperature and how the heat is applied because fresh garlic can easily burn. Every time I’ve put minced garlic on these potatoes, it just ends up burning and there’s no garlic flavor.

Garlic powder, on the other hand, is much more tolerant to heat and does not burn in the same manner, or as fast, as fresh garlic. Using garlic powder allows you to cook these potatoes at 425℉

The Oil for Crispy Potatoes

The oil that you use for making your crispy potatoes should be one that has a high smoke point. The oils with a high smoke point that I suggest someone to use would be tallow, lard, coconut oil or avocado oil. 

For the most neutral flavor, I suggest using tallow or avocado oil. If you choose coconut oil, be aware that it may impart an ever so slightly sweet or distinct flavor on your potatoes.

The Secret to Making Crispy Potatoes Every Time

The main secret to making these potatoes extra delicious and crispy is the pan that you choose to cook your diced potatoes. The best way to get crispy potatoes is to use a cast iron pizza pan. If you do not have a cast iron pizza pan, a large cast iron skillet will work just as well. 

If you have no cast iron pans or skillets, the best alternative is to use a dark baking pan. It may seem silly but a dark pan will change how a food bakes in the oven. Using a darker pan instead of a glass pan will result in a crispier potato.

Ingredients and Tools

3-5 yellow potatoes – when chopped, you should have about a quart(4 cups) of potatoes

~¼ cup Oil of choice (Lard, Tallow, Coconut or Avocado)

1 TSP Sea Salt – I like to use Redmond Real Salt for the extra minerals

1/4 tsp Pepper

1 tsp each Garlic Powder, Paprika, Chili Powder & Parsley

A medium bowl

A large cast iron pan or cast iron pizza pan. 

Directions

Place your large cast iron pan into your oven and preheat your to 425℉.

While your oven & cast iron pan are preheating, chop your potatoes into approximately ½ inch cubes and place into a medium sized bowl. 

When all of the chopped potatoes are in the bowl, drizzle with your oil of choice and sprinkle with seasonings.

Toss or mix the potatoes until all are mostly covered in the oil and seasonings. 

Once the oven has come up to temperature, add all of the potatoes to the preheated cast iron and spread the potatoes apart so that there are no overlapping potatoes. 

Bake at 425℉ for 30-45 minutes or until your desired crispiness. 

Once fully cooked, remove from the oven and serve with your meal of choice.

TIP: Try to chop your potatoes as close to a uniform cube shape. This will help to ensure all of the potatoes cook evenly. Chopping too many into small, uneven or too skinny of pieces can result in dried out or burnt potato pieces.
