Avocado Oil Caesar Dressing Recipe With Anchovies

Equipment

  • Measuring cups and spoons
  • An Immersion Blender or regular blender
  • Medium Bowl
  • Glass storage container with an airtight lid

Ingredients

  • 2 teaspoon Dijon mustard
  • 2 tablespoon White Wine Vinegar
  • 2 tablespoon Fresh Lemon Juice
  • 2 tablespoon Finely Grated Parmesan Cheese
  • 1 cup Avocado oil can sub with olive oil, if desired
  • 2 Egg yolks
  • 2 tsp Anchovy Paste or 4 anchovy filets
  • 2 cloves of Garlic peeled and mashed
  • tsp Fine Black Pepper

Instructions

  • Add all ingredients in a tall walled container or your blender.
  • Blend 30-60 seconds or until everything is well incorporated. (If you use an immersion blender, be aware that it may look a bit like mayonnaise)
  • Transfer to an airtight container and place in the refrigerator for 30 minutes or until serving.
  • Serve as desired. Makes about 1 1/2 cups of dressing.
