Easy Avocado Oil Caesar Dressing Recipe With Anchovies

This traditional style caesar dressing is perfect for a classic caesar salad. The rich and creamy dressing is perfect to enjoy all summer long. Although this recipe uses anchovies, there is little to no fishy taste! It has a perfect creamy balance with a hint of umami and garlic.

Ingredients In Caesar Dressing

The main base of this dressing is avocado oil. Using avocado oil provides a large neutral base that allows this dressing to showcase the other delicious and complex flavors of the other ingredients. 

Dijon mustard and raw egg yolk are two other ingredients that provide both binding qualities and flavor.

The rest of the recipe consists of herbs, seasonings and other flavor enhancing ingredients. These delicious flavor enhancers include white wine vinegar, fresh garlic, fresh lemon juice, anchovy paste, parmesan cheese, fine black pepper and sea salt. 

While this recipe calls to use fresh options, this recipe can also be made with some dried or pre-bottled ingredients. If you need to, you can swap fresh garlic for powdered garlic and fresh lemon juice for bottled. 

Serving Caesar Dressing

Most commonly, this dressing is used for a salad dressing. However, you can also use it to accompany a veggie tray, chips, crackers, pretzels, bread or as a dipping sauce for anything else!

The shelf life of this homemade Caesar salad dressing is much shorter than what you would buy in the store. And for good reason! Homemade caesar dressing is made with real ingredients that will go bad faster than the ingredients big companies use in their shelf stable dressings. 

It’s best to use homemade caesar dressing as close as possible to when it’s prepared. Ideally use all of your caesar dressing within 3-5 days after preparing.

Ingredients and Tools

Makes about 1 ½ cups

  • 2 teaspoon Dijon mustard
  • 2 tablespoon raw wine vinegar
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon finely grated Parmesan cheese
  • 1 cup avocado oil (can sub with olive oil, if desired)
  • 2 egg yolks
  • 2 tsp Anchovy Paste (or 4 anchovy filets)
  • 2 cloves of garlic, peeled and mashed
  • ⅛ tsp Fine Black Pepper
  • Measuring Cups and Spoons
  • An Immersion Blender or regular blender
  • Medium Bowl
  • Glass storage container with an airtight lid

Directions

Add all ingredients in a tall walled container or your blender.

Blend 30-60 seconds or until everything is well incorporated. (If you use an immersion blender, be aware that it may look a bit like mayonnaise)

Transfer to an airtight container and place in the refrigerator for 30 minutes or until serving. 

Serve as desired.
