Easy Blueberry Popsicles

Equipment

  • A medium saucepan
  • Measuring cups and spoons
  • A large pitcher or glass jar
  • A whisk or spoon
  • An immersion blender
  • Disposable popsicle bags or A popsicle mold

Ingredients

  • 1 Cup Cane Sugar or sugar equivalent sweetener like coconut sugar, date sugar, maple syrup or honey
  • 2 Cups Blueberries
  • 4 Cups Filtered water
  • 2 TBSP Lemon Juice

Instructions

  • To begin, add 1 cup of filtered water and 1 ½ cups sugar in a saucepan. Stir until the sugar is dissolved.
  • Bring the sugar mixture to a light boil.
  • Add the blueberries to the pan and blend until smooth.
  • Remove from the heat. Set aside until completely cool.
  • If you don’t want any blueberry pulp in your popsicles, you’ll need to strain the blueberry syrup. Once cool, strain the blueberry pulp from the simple syrup by pouring the mixture through a fine mesh sieve.
  • While the blueberry simple syrup is cooling, combine lemon juice and remaining 3 cups of filtered water into a pitcher or large glass jar.
  • Once the blueberry pulp is strained from the syrup, add the blueberry simple syrup to the pitcher or container, stir and add mixture into each compartment of your popsicle mold.
  • Place popsicles on a flat surface in your freezer until solid.
  • Once the popsicles are solid, they are ready to be enjoyed!
