Equipment

  • Medium mixing bowl

  • Large Tea Towel

Ingredients

  • 2 Medium Cucumbers roughly 2-3 cups when sliced – Peel if desired
  • ¼ cup Finely Chopped Yellow Onion

For the dressing:

  • ¼ Cup Mayonnaise
  • ¼ cup Greek Yogurt
  • 2 Tsp Dried Dill
  • 1 Tablespoon White Wine Vinegar
  • ½ Tsp Salt – for extra minerals, I like to use Redmond Real Salt
  • Tsp Pepper

Instructions

  • Begin by slicing your cucumbers into ⅛-¼ inch rounds.
  • When both cucumbers are sliced, place all of the rounds on a clean and dry tea towel. Be sure they’re arranged roughly in a single layer.
  • While the tea towel absorbs some of the moisture from the cucumbers, finely dice the onions.
  • In a medium mixing bowl, mix together the onion with the mayonnaise, greek yogurt, onion and other seasonings. Mix until well combined.
  • Add all sliced cucumbers to your mixing bowl and stir well until all of the slices are evenly covered with the sauce mixture.
  • Cover the bowl with beeswax wrap, plastic wrap or other lid and place in the fridge. This cucumber salad can be eaten immediately but the flavors will be enhanced if it sits in the fridge for at least an hour. For best results, you can make this cucumber salad the night before you want to eat it so the flavors have more time to develop.
