How to make Classic Chicken Soup with Nourishing Bone Broth
On a cold fall or winter day, this classic chicken soup with bone broth is sure to warm you stomach like no other meal!
In my opinion, this soup is best made if you use leftover chicken from a previous whole chicken dinner and make the broth from the remaining bones. Using the bones from a leftover roasted chicken to make the broth for this soup is not only delicious but makes this meal really inexpensive.
Why make your own bone broth?
Good bone broth can be expensive to buy. A soup can get pretty costly if you use multiple quarts or a gallon of bone broth. However, bone broth is basically free to make if you use leftover bones from a previous meal along with veggie scraps that were going to be tossed anyway. As a bonus, you can easily control the flavor by picking different veggies and different spices and amounts of salt & pepper. Using all of these pieces that normally get tossed really helps to stretch each meal and lower the food cost.

Ingredients and Tools for Chicken Soup
3 quarts chicken bone broth or stock
1-3 cups Cooked & Shredded or chunked Chicken
1 ½ cups Carrots
1 cup Celery
3 cloves Garlic – garlic lovers: measure with your heart.
1 large Onion
1 tsp each dried Sage & Thyme – Dried or fresh will work great. Be sure to adjust the amount if you’re using fresh.
Salt & Pepper to taste
Cooking oil – lard or tallow is ideal but olive or avocado oil will work well.
Dutch oven or stockpot
Optional additions – noodles or dumplings
Instructions for Chicken Soup
Add oil to your dutch oven and set to medium heat.
Once the pot is warm, add chopped carrots, onion and celery and cook until the onions become translucent. Stir occasionally.
Once onions are translucent, add garlic and cook for another minute.
Add the sage and thyme to your vegetables and mix to evenly distribute. Cook for about 30 seconds.
Add the prepared chicken to the pot and pour broth on top. Mix well to ensure nothing has stuck to the bottom of the pan.
Let simmer until vegetables are tender.
Add salt and pepper to taste.
If desired, add noodles or dumplings. Serve with buttered bread and enjoy!

While making your own broth is easy and a great way to turn scraps into something delicious, it’s not the only way to make this, or any, soup. This recipe will work great if you use store bought broth! If you use broth from the store, be sure to taste your soup before adding additional salt! While homemade broth typically needs a good amount of salt, it can be easy to over salt soup when you use store bought broth.
I don’t have a dutch oven, can I still make this?
A dutch oven is a great option for making soup. However, this chicken soup will taste just as good if it’s made in a metal stock pot. Use what you have!
